Cold Brew Iced Coffee and Simple Syrup

once upon a time
i was decidedly not a fan of cold coffee

but though it took me a while
i eventually learned to love coffee in its many incarnations

frappes
macchiatos
and the simple and delicious

Iced Coffee

but being the cheapskate that you know and love
or at least...know
i decided i could make my own brew at home
to keep me cool this summer

to begin with
i make a batch of cold brew coffee

what is this Cold Brew i speak of?

supposedly
cold brewing results in coffee that is less acidic
and a better way to achieve a perfectly smooth and balanced cup of joe
(read: no bitterness)

but you could also brew strong coffee and chill it
if desired

to cold brew your coffee
simple add one part coffee grounds to four parts cold water

let steep for about 12 hours and strain into a clean jar
using a coffee filter inside a strainer

your coffee concentrate
will keep for about 3 days in the fridge
(but it probably won't last that long)

i like to make Simple Syrup to sweeten my drinks
by combining equal parts white sugar and cold water
shake a few times until sugar is completely dissolved
and store in sealed container in refrigerator

to make your iced coffee
fill a glass with as much ice as you like
pour about 1/2 to 3/4 full with your cold brew coffee
add a dribble or two of Simple Syrup
and fill remaining space with the milk of your choice

you can easily add a dribble of chocolate syrup for mocha flavor
or caramel
vanilla
coconut
mint

well
you get the idea

slip in a straw
and sip your way to happiness

creamy, cold, and delicious

Happy Summer Sipping!
