i'm telling you
if you have butter, flour, and sugar
and a couple hours of free time
you'll want to spend them all
making shortbread
my college roommate and i
used to bicker over whose shortbread was better
her grandma's, or my mom's
and then we figured out
that those eminent ladies
were using the same family recipe
so we were both right
(and related, so we really should have figured it out sooner)
i make this every year at Christmastime
and it disappears quickly
perfect for a cookie exchange
or to serve with coffee
it also goes down rather nicely
for breakfast too
no judging
follow these directions
and you'll be wiping the crumbs from your fingers too
Ingredients
1 cup butter, softened1/2 cup sugar
2 1/4 cup flour
Directions
In mixer, beat butter and sugar until light and fluffy. Add flour and mix until combined. Batter will appear crumbly. Pour into ungreased, square baking pan and press evenly with hands. Poke top with fork, all over. Bake at 250 degrees for one hour.
After removing pan from oven, slice into inch wide bars with sharp knife. Sprinkle top with sugar. Turn off oven and replace pan inside, allowing to rest in off oven for 1 hour. Cool completely and serve.
