Easy Gluten Free Doughnut Holes

Judah turned 10



my baby

is a baby no longer

sniff



so naturally

i wanted to drown my sorrows

in doughnut holes


just kidding


like any good mum

i put my game face on

and hosted his first sleepover birthday party


since Judah and two of his buddies

are gluten free

i made gluten free pizza (Namaste) for supper

 and gluten free chocolate birthday cake for dessert



actually

i made two gluten free cakes



the first one (Hodgen Mills)

i whipped up

added chocolate chips

and then poured into pans that i had greased and  floured



oopsie



i guess

old habits die hard



so i made a second gluten free cake (Betty Crocker)

in greased and unfloured pans

and all was well



for breakfast

i'd wanted to make gluten free, baked doughnuts

but couldn't find any doughnut pans anywhere


so i found a recipe for doughnut holes

that i could make using a gluten free baking mix (Aldi)

that i had on hand



these turned out so well

that i decided to share the recipe with you





i have to tell you

i've been pretty disappointed

by my gluten free baking results thus far



but these were fabulous

and easy

and the kids all loved 'em



it was nice to make a gluten free treat

that actually tasted gluten full for once

Ingredients
  1. Vegetable oil for frying
  2. Cinnamon and Sugar for rolling
  3. 1 1/4 c. GF baking mix (I used Aldi's)
  4. 1/4 c. packed brown sugar
  5. 2 T butter, melted
  6. 1/3 c. buttermilk (can substitute reg. milk with a splash of vinegar to sour)
  7. 1 egg, beaten
Instructions
  1. In deep fryer or 2-quart heavy saucepan, heat 2 to 3 inches oil to 375°F. In shallow bowl, mix granulated sugar and cinnamon; set aside.
  2. In medium bowl, mix remaining ingredients until smooth. Shape dough into 1 1/4-inch balls. Carefully drop balls, 5 or 6 at a time, into hot oil. Fry about 1 to 2 minutes or until golden brown on all sides; drain on paper towels. Immediately roll in cinnamon-sugar.
Notes
  1. To substitute for buttermilk, pour half a teaspoon of vinegar into measuring cup. Add milk to 1/3 line and allow to sit for 5 minutes before adding to mixture.
